Ingredients

  • 1/2 cup oat flour

  • 1/2 cup almond meal

  • 1/4 cup coconut flour

  • 1/4 cup pure maple syrup

  • 80g coconut oil

  • Must all be at room temperature

  • 2 tubs of YoPRO Plain yoghurt

  • 175g light cream cheese

  • 3 eggs

  • 3 tsp lemon zest

  • 1/2 cup stevia

  • 1 tsp vanilla essence

  1. Method:

    1. Preheat your oven to 160°C fan forced

    2. Grease and line a cake or spring tin with baking paper

    3. Combine oat flour, coconut flour, and almond meal with maple and melted coconut oil

    4. Press into base of tin and bake for 10-12 minutes until lightly brown

    5. Remove tin and cool completely

    6. In a bowl, beat together cheese and yoghurt, add in stevia and 1 egg at a time until combined

    7. Grate in lemon zest and stir in vanilla

    8. Pour over base and bake for 45-50 minutes until it has a slight wobble when touched in the centre

    9. Cool and pop in the fridge to set for another 2-3 hours

    10. Cut into 12 slices
